Recipe nº16: Soya Bolognese

As promised to Joana, here it starts an age with more soy recipes.For the next days I hope that it will appear here:
-Canelones;
-Pie-rice;
-(Jardineira)Gardeners.

*****Soya Bolognese*****

Ingredients
-Spaghetti or fettuccine (I'm addicted to it now);
-Butter;
-Grained Soy;
-1 Onion;
-2 Tomatoes;
-Olive oil;
-Laurel leaf (folha de louro);
-Salt, pepper and chilli;
-Tomato concentrate.

Method of preparation:
Make the usual steamed in a pan with olive oil, minced onion and tomato cubes for 5 minutes. Add hot water and the grained soy (water quantity (+-) 2.5 X the amount of soy).
Season with bay leaf, salt, pepper, chilli and tomato concentrate.
Cook for +- 20 minutes and turn off the stove when it has reached the quantity of bolognese sauce you want.
For the spaghetti: add boiling water in a pan and cook the spaghetti for 10 minutes. Drain the water and place a knob of butter.

  1. Another wonderful recipe that I have just tried! It went quite ok (which amazes me evertime that I can actually cook).

    There was only one difference. Here in England, the kind of soya that they sell is a bit different. They say in the cooking instructions to cover the soya with boiling water for 1 minute BEFORE cooking it. I tried it and then I followed your recipe.

    And I noticed something different. The soya did not absorbed as much water as it usually does! What do you have to say my dear Carlota? Is that normal?
