Recipe nº19: Cannelloni of spinach and fresh cheese

***********Cannelloni of spinach and fresh cheese*******

Ingredients (2 persons):

-8 Cannelloni
-Small package of Béchamel sauce
-Grated mozzarella cheese
-200g of spinach
- +- 200g of fresh cheese or ricotta
-1 Ripe tomato
-Tomato concentrate
-Spices: nutmeg, fine salt
-Onion
-Olive oil.

Method of preparation:
Wash and cut the spinach. Cook them for 2 minutes. Drain the water and let them cool.
In a container, place the crumbled cheese and add to it the spinach.
Mix both and season with salt, nutmeg and 1 tablespoon of olive oil.

Tomato sauce:
In a frying pan, saute 1 ripe tomato, half onion and add the concentrate and 2 tablespoons of water. Cook for 5 minutes.

Put the cannelloni in hot water to soften.
In a pyrex for baking, sprinkle some olive oil and béchamel sauce to avoid that the cannelloni get sticked.
Garnish the cannelloni with the mixture of cheese and spinach.
Put the tomato sauce on top, then grated cheese and then the béchamel sauce.
Bake + -30 minutes in the oven.

Recipe nº18: Roast vegetables (assado de vegetais)



Roast vegetables
(for 2 people)

Ingredients:
-1 Small eggplant (beringela)
-1 Small zucchini (courgette)
-1 Medium onion
-1 Carrot
-2 Ripe tomatoes
-concentrated tomato
-1 Can of mushrooms or fresh ones
-a small bunch of broccoli
-seasonings: parsley(salsa), 2 bay leaves, salt and pepper
-5 Potatoes for roasting
-Olives
-olive oil.

Method of preparation

Preparing the vegetables:
Wash the vegetables well and cut their peel.
Cut into thin slices: the onion, eggplant and mushrooms.
Dice: the carrots, tomatoes and eggplant.
Peel potatoes (or not, choose what you prefer), and slices into 4 buds.
Wash the broccoli and cut into small bundles.

In a baking dish, place a bed of olive oil. Place first the potatoes, carrots (which take longer to bake) and then the other vegetables.
Season it, put some concentrated tomato and sprinkle with 2 tablespoons of olive oil and ¼ of water.
Wrap the pyrex in silver and lead to the oven for + - 45 minutes.

Recipe nº17: Slices of breaded eggplant (Beringela panada)

Ingredients:
-1 Eggplant *
-1 Egg;
-2 Tablespoons of flour;
-Sunflower oil;

* How to choose the rigth eggplant? - Squeeze the eggplant. If the shell get marked it will be good to cook, otherwise it will still be green.

Method of preparation:
Wash the eggplant and cut it into thin slices.
Purée (polme): In a soup bowl, beat 1 egg and mix thoroughly with 2 tablespoons of flour.
Place the slices in it and bring to fry in a pan with oil over low heat.
Serve with tomato rice.

Recipe nº16: Soya Bolognese

As promised to Joana, here it starts an age with more soy recipes.For the next days I hope that it will appear here:

*****Soya Bolognese*****

Ingredients
-Spaghetti or fettuccine (I'm addicted to it now);
-Butter;
-Grained Soy;
-1 Onion;
-2 Tomatoes;
-Olive oil;
-Laurel leaf (folha de louro);
-Salt, pepper and chilli;
-Tomato concentrate.

Method of preparation:
Make the usual steamed in a pan with olive oil, minced onion and tomato cubes for 5 minutes. Add hot water and the grained soy (water quantity (+-) 2.5 X the amount of soy).
Season with bay leaf, salt, pepper, chilli and tomato concentrate.
Cook for +- 20 minutes and turn off the stove when it has reached the quantity of bolognese sauce you want.
For the spaghetti: add boiling water in a pan and cook the spaghetti for 10 minutes. Drain the water and place a knob of butter.

Recipe nº15: (Cebolada) Onion tofu with sesame seeds



Ingredients:
-Tofu;
-Sesame seeds;
-1 small onion;
-1 tomato;
-Tomato concentrate;
-Fusili pasta;
-Mushrooms;
-Salt;
-Olive oil.

Method of preparation:
In a frying pan, place 2 tablespoons of olive oil and very thin sliced onion. Cook 1 minute and add the diced tomato and concentrated. Cook 4 minutes, add 1/4 cup of water and place the mushrooms. Cook 2 minutes and place the tofu slices.
Cook for more 10 minutes. At the end add some sesame seeds.

Cook the fusili in a pan with boiling water for 10 minutes. Then drain the water and serve with the onion tofu.

Potato and soybean pie (empadão)

Ingredients:
-Potato to make mash (puree);
-Grained Soya;
-2 tomatoes;
-Tomato concentrate;
-1 egg;
-Mozzarella cheese;
-Olive oil;
-1 Large onion;
-Salt, pepper, 1 bay leaf


Method of preparation:

For the puree:
Cook some large and peeled potatoes and roll them in the potato masher. Then, season with some butter, milk, a few tablespoons of water, salt and nutmeg; Put the misture in a pan and cook for more 3 minutes. Stir with a wooden spoon with caution.

Cooking the grained soybeans:
In a pan, put a few tablespoons of olive oil and peeled onion. After 2 minutes place the tomatoes cut in cubes. Let them disintegrate. Then add boiling water, and soy granules.
Season with salt, pepper, bay leaf and tomato concentrate.
-»The amount of water must be such as it will leave the soybean swell and yet when moving with the wooden. You need to bake about 20 minutes and never dry. At the end must be slightly wet.

For the pie:
In a form of baking in the oven, place the soy and the mash layered or mixed. Place on the top 1 beaten egg and some grated cheese. Bake until the egg is cooked.
Accompany with salad!

Recipe nº13: Canja




**********Canjinha***************
This meal is the first choice for some students who do not want to waste time cooking, like me and Helena. Many were the warm soups shared with her. I will always remember her when cooking this recipe.
This is my dedication to you Lenita.

Ingredients:
-Alphabet pasta;
-Olive oil;
-Onion;
-Salt;
-Spearmint.

Method of preparation:
In a pan with boiling water, put the pasta and cook for 13 minutes. Add some spearmint leaves, 2 slices of onion and some salt. At the end of cooking, add 2 tablespoons of olive oil.
Bon apetit.

Recipe nº12: Sausages with spinach

Ingredients:

-Vegetarian sausages;
-Spinach;
-1 small onion;
-2 ripe tomatoes;
-Tomato concentrate;
-Olive oil;
-Salt.

Method of preparation:
Put the sausages in a pyrex and make some cuts in them. Spread some butter on the top of the sausages. Bake for about 15 minutes in the oven.
Boil spinach and season with little salt.
In a frying pan, place olive oil and chopped onion until it gets blonde. Place the tomatoes cut into small cubes and cook them until they disintegrate. Season with salt and add a little tomato concentrated.
Pour this mixture over the spinach.
Serve with peas rice,for example.

Recipe nº11: Fetucchini with mushrooms and cream



Ingredients:
-Fetucchini;
-Mushrooms;
-Cream;
-3 cloves of garlic;
-Olive oil;
-Broccoli;
-Sal, pepper and nutmeg (noz moscada);
-Fresh tomato.

Method of preparation:
Let the fettuchini bake for 10 minutes in boiling water and drain.
In a frying pan cook the mushrooms with 2 tablespoons of olive oil and 1 clove of chopped garlic, for about 3 minutes and season with salt and pepper. Add cream and cook for another 5 minutes. Mix with the fettuchini at the end.
In a pan with 3 tablespoons of olive oil and 2 cloves of chopped garlic, cook the broccoli for about 10 minutes until they are tender.Add some water if necessary. Season with salt and nutmeg. Cut 1 tomato into thin slices to follow with the meal.

Recipe nº10: Peixinhos da Horta (Garden Fish)

Peixinhos da Horta is a traditional Portuguese dish that gave rise to Japanese tempura dish, when was brought to Japan in mid-sixteenth century by Portuguese missionaries.
For me, this is the most tasty way(though less healthy) to eat green beans.

Ingredients:
-Green Beans;
-1 Egg;
-Wheat flour;
-Sal;
-Sunflower oil.


Method of preparation:
Prepare the green beans by cuting the ends and thicker sides. Cook the beans for 2 minutos. Let it cool.
Purée (polme): In a dish, beat the egg and gradually add spoonfuls of flour until the dough is not too thick.
Wrap the beans in the purée and fry in sunflower oil, with low heat in a frying pan until they get "blond".
You can follow them by tomato rice, for example. Bon apetit!

Recipe nº9: Deer Steak with mushrooms and cream

***Bife de Veado com cogumelos e natas***

This recipe is dedicated to my dear friend João Teles, and affectionately called: deer steak.
The first time that Teles crossed with a seitan steak on my plate, he asked the usual question: what a f* is that !!!???
Taking advantage that by that time he didn't know how fudge I can be sometimes, I told him that it was deer. I wrapped the lie so well that he believed and even tasted it, feeling that it was real the poor little animal that was in his mouth. Poor deer that inspired the beautiful and sad story of Bambi, in the mouth of Teles...




So here's the recipe for all of you (especially for Joana):

Ingredients:

-Seitan;
-Mushrooms;
-1 Lemon;
-3 Cloves of garlic;
-Cream;
-Tomato concentrate (optional);
-Salt and pepper;
-2 Bay leaves;
-Olive oil.

Method of preparation:
The Seitan, wheat gluten (http://pt.wikipedia.org/wiki/Seitan) is usually seasoned before cooking to get more taste.
Thus, at least 30 minutes before starting to cook, season the seitan cut into thin steaks with 1 sliced lemon and garlic.
In a frying pan put a layer of olive oil with 2 cloves of minced garlic. Let browning and place the sliced and washed mushrooms. Let it browning and then, add the seitan and the bay leaves. Cook for + -5 minutes and add the tomato paste and cream. Let it cook for a few more minutes and it's ready.
Follow this dish with chips, for example. Bon apetit!

Recipe nº8: Lasanha à Joana

This recipe was taught me by my dear friend Jo. Possibly it is very padded because I didn't have my friend here nor her book to guiding me,it was all done by my poor memory. But at the end it was delicious.

(for 1 person)
Ingredients:
-3 Sheets of lasagna;
-Bechamel sauce;
-Grated mozzarella cheese or 4 cheeses;
-Vegetables: 1/2 aubergine(beringela), 1/2 zucchini(courgette), 1/2 carrot, a hand of peas;
-Mushrooms
-2 Vegetarian Sausages;
-1 leaf of laurel (louro);
-Salt and pepper;
-1 Onion;
-Olive oil.

Method of preparation:

In a pan place a layer of olive oil and chopped onion and let brown. Add the carrots and the aubergine cut into cubes. Stir for 2 minutes. Add half a cup of hot water to the pan. Add the peas,the mushrooms and the sausages too. Season with salt, laurel and pepper.
Leave this on fire until the peas are cooked and add water if necessary.

Lasagna:
Cut the zucchini into thin slices.
In a baking greased, place a layer of bechamel sauce on top and the 1st sheet of lasagna. Place the filling with a few slices of zucchini on top. Add bechamel. Do the same with the 2nd sheet of lasagna. In the 3rd cover with grated cheese and bechamel. Bake until golden brown (25min).
