Recipe nº19: Cannelloni of spinach and fresh cheese

***********Cannelloni of spinach and fresh cheese*******

Ingredients (2 persons):

-8 Cannelloni
-Small package of Béchamel sauce
-Grated mozzarella cheese
-200g of spinach
- +- 200g of fresh cheese or ricotta
-1 Ripe tomato
-Tomato concentrate
-Spices: nutmeg, fine salt
-Onion
-Olive oil.

Method of preparation:
Wash and cut the spinach. Cook them for 2 minutes. Drain the water and let them cool.
In a container, place the crumbled cheese and add to it the spinach.
Mix both and season with salt, nutmeg and 1 tablespoon of olive oil.

Tomato sauce:
In a frying pan, saute 1 ripe tomato, half onion and add the concentrate and 2 tablespoons of water. Cook for 5 minutes.

Put the cannelloni in hot water to soften.
In a pyrex for baking, sprinkle some olive oil and béchamel sauce to avoid that the cannelloni get sticked.
Garnish the cannelloni with the mixture of cheese and spinach.
Put the tomato sauce on top, then grated cheese and then the béchamel sauce.
Bake + -30 minutes in the oven.
